Spring brings plenty of promise as we turn our backs on winter and look towards the summer ahead. And yet it is a lean season in fruit (We continue munching on apples and pears drawn out of cold storage, hungrily waiting for the soft fruit to begin — though strawberries have a delightful head start).

But look to the garden, and to spring’s abundance of vegetables and flowers. Just as in tea, flowers are excellent in cocktails, as their subtle flavour is not lost when combined with spirits. Generally, the best way of getting the flavour of flowers into a drink is to make a syrup out of them. See the recipes for syrups made with hibiscus, honeysuckle and chamomile in the hot-process syrup section.

But don’t leave cocktails just to fruits, flowers and herbs — this chapter also has recipes featuring sugar-snap peas, cucumber and sorrel.
