And it seems the colder it gets, the zingier citrus tastes. Just about any variety works in a cocktail, from teeny cumquats to giant grapefruits, and all the oranges, mandarins and tangelos in between.

There is perhaps no better use of grapefruit than in drinks — whether squeezing it in fresh, making zesty cold-process syrup, or using it to infuse Campari.

Stalwart vegetables such as carrot, celery and beetroot are not unwelcome in cocktails, adding colour and earthiness. And then there are those ingredients that don’t need to be associated with any season at all, but seem particularly fitting in the sparest time of year. In one of the cocktails in this chapter, coffee is paired with honey, cardamom and butterwashed vodka, for a warming take on the classic espresso martini.
