Dressing

Ingredients

Quantity Ingredient
3 tablespoons extra-virgin olive oil
2 tablespoons tarragon vinegar
1 tablespoon grainy mustard
salt
freshly ground black pepper
1 bunch watercress, washed and leaves picked
1 small bunch frisee, inner pale leaves only
a big handful rocket leaves
1 cup parsley leaves
2 spring onions, finely sliced into rings

Method

  1. In a large mixing bowl, combine the dressing ingredients and whisk together well.
  2. Combine all the salad ingredients in a large mixing bowl. Pour on the dressing and toss everything together gently.
