This chunky salad is wonderful with all sorts of grilled and barbecued meats, but I think it’s especially good with lamb. Try to find smooth, creamy Danish feta, if you can. Add a big handful of roughly chopped rocket leaves and it becomes a big Italian salad!

Ingredients

Quantity Ingredient
1 lebanese cucumber, cut into 2 cm cubes
2 roma tomatoes, cut into 2 cm cubes
1 red onion, cut into 2 cm cubes
1/4 cup kalamata olives, pitted
10 basil leaves, roughly torn
1 tablespoon parsley, roughly chopped
1 teaspoon dried oregano
130g danish feta, roughly crumbled
1 lemon, juiced
1/4 cup extra-virgin olive oil
1/2 teaspoon salt
1 teaspoon freshly ground black pepper

Method

  1. To make the salad, combine all the ingredients in a large mixing bowl and toss together gently.
