This might seem like an unlikely combination, but pork has its own underlying sweetness that actually goes really well with vanilla. These chops smell amazing while they’re cooking, and they taste pretty amazing too.

Ingredients

Quantity Ingredient
1 tablespoon brown sugar
1 vanilla bean, split and seeds scraped
1/2 orange, zested
1 tablespoon fresh thyme, chopped
2 tablespoons olive oil
1 tablespoon sherry vinegar
2.1kg pork t-bone chops
salt
freshly ground black pepper

Method

  1. Combine the sugar, vanilla, orange zest and thyme in a mortar and grind together. Stir in the oil and vinegar to form a paste.
  2. Arrange the pork chops in a large shallow container. Pour on the marinade and use your hands to rub it in evenly. Cover with plastic wrap and leave to marinate in the refrigerator overnight, or for a minimum of 2 hours.
  3. When ready to cook, preheat the grill to medium–high. Season the chops with salt and pepper and cook for 8–10 minutes, until the chops are just cooked to juicy pinkness. Serve with your choice of salad.
