Hot roast beef sandwich

One of the best things about roast beef dinners is making sandwiches from the leftovers. I usually fry up some onions and bacon and warm through the beef slices as I love the contrast these warm ingredients make with the cold butter on good crusty bread

This is not so much a recipe, as a list of suggested ingredients; but obviously you should feel free to create your own sandwich masterpiece.

Ingredients

Quantity Ingredient
heaps salted butter
1 onion, cut into rings
a few rashers bacon, (optional)
leftover roast beef, thinly sliced
1 loaf crusty sourdough bread
your favourite mustard, (I use a mix of hot English and French grain mustards)
good-quality mayonnaise
iceberg or cos lettuce or rocket leaves
thick slices ripe tomato
thick slices your favourite tasty cheese

Method

  1. Melt a generous knob of butter in a heavy-based frying pan. Sauté the onion rings until soft and golden, then transfer to a warm plate. Fry the bacon until crisp, then transfer to a warm plate. Lower the heat and add the beef slices to the pan. Fry very gently until just warmed through.
  2. Slice the bread and spread with lots of butter. Assemble with your choice of ingredients and eat with a good cold beer or a glass of milk.
